Vineyard: The planting of de Coelo Vineyard was inspired by creating true wines of spirit from intricate geologies, an extreme climate and a willingness to explore new vistas of winegrowing by incorporating biodynamic farming principles. The de Coelo Vineyard, located 5 miles from the Pacific Ocean, is a 25 acre vineyard planted to 5 different clones producing 4 distinct wines, one of them being the Arbore Sacra, the sacred tree, block.
Vinification: The grapes for this alluring wine were harvested at night to protect their delicate flavors and to preserve freshness. The Calera Clone was fermented individually in small open top fermenters utilizing indigenous yeast at cool temperatures to stimulate slow phenolic extraction. When dry, the grapes were pressed immediately to French oak barrels to undergo native malolactic fermentation. Arbore Sacra is aged in barrels for fourteen months.
