Winemaking: Made with the most traditional hands-on methods, the grapes were hand sorted in the vineyard. In the winery the fruit is handled delicately to remove the stems then optically sorted to retain only the most perfect berries. Those berries are left to cold soak in an open top fermenter, punched down daily and then fermented with native yeast. The varietals and blocks are always kept separate to express the specific site and blended prior to bottling. The wine was aged in French oak for 19 months.
